The Occasional Sweet Treat 

Here are 3 quick and tasty treats to satisfy your taste buds….

Those who know me,  know I put emphasis on 3 great meals per day with limited snacking in between, and limited treats. But sometimes when the mood strikes, it’s nice to know you can rustle up a quick, easy, and healthy treat, for you or anyone else who’d like to indulge in a healthy morsel.

Here are 3 super quick ones that require minimal prep and minimal ingredients.

These are all gluten free and paleo friendly, even so, you should only eat occasionally and always eat consciously.


Berry Crumble

Berries are full of so much goodness and have so much therapeutic benefit. I suggest you stock up over summer and freeze your own, or buy organic frozen berries, these are normally much tastier than your standard store brought variety.

Benefits of Berries: 
Full of antioxidants to help fight free radicals
Blueberries contain a prebiotic that feeds your friendly gut army
Berries are low sugar, so don’t disturb your blood sugar as much as other fruits
Super high in vitamin C, which makes them a great immune boosting, anti aging and adrenal nourishing food
Great source of healthy fibre

Here’s my healthy crumble, you can omit the sugar if you fancy, but this is a super low sugar version anyway.

Ingredients
Serves 1 portion 

1-cup berries of choice
½ cup almond meal
¼ cashews, blended until resemble breadcrumbs
1-teaspoon coconut sugar
½ teaspoon vanilla powder
5-10gm butter (use coconut oil if you are dairy free)

Method

In a bowl mix the dry ingredients together, add butter and rub with your fingers until the mix resembles breadcrumbs. Add vanilla and combine.

Place berries in the bottom of a one serve ovenproof dish; layer the crumble mix on top, place in an oven at 180C for 10 minutes.

Serve with coconut yoghurt


Coconut Crackles

Ingredients
¼ cup coconut cream
60gms cacao butter
½ cup cacao powder
1-teaspoon vanilla powder
1 cup of coconut shreds
coconut powder to garnish
– honey as you like, i find the coconut sweet enough though

Method

Heat the coconut milk in a pan until warm, add cacao butter and melt down. Once the cacao butter has melted down, remove from the heat and stir in cacao powder, vanilla, and honey if you are using it. Keep stirring until it is nice and smooth. Finally add in all the coconut shreds and stir until fully combined.

Pop on a plate, so that the mix is just a thin layer over the plate, place in the fridge to cool. Once it has cooled you can break it down into bite-sized bits.

This is a great little snack, and can also be stored in the freezer, for those times you just need a little sweet treat.


Caramelized Salted Almonds

Ingredients
150gms activated almonds
¼ cup black strap molasses
pinch Himalayan rock salt

Method
Place molasses in a pan, heat through on a low heat, until nice and hot. Once hot, and runny stir through the almonds and salt. Once all the almonds are fully coated, place in a bowl and put in the fridge to cool down.

This is a great sweet treat that has the added benefits of extra iron from the molasses.
